Memorial Day Munchies With Michelle: Want to See the First Lady-Endorsed Recipe for Corn Soup?

We know many of you are cooking out this Memorial Day as you kick off the unofficial start to summer. And we know that many of you are just itching to know what the First Lady would cook on this day. At least the Associated Press thinks you might be wondering that. So, the outlet decided to post a summer recipe from Michelle Obama’s healthy-eating initiative: a book titled, “American Grown: The Story of the White House Kitchen Garden and Gardens Across America.”
Here, then, is the Michelle-endorsed recipe for corn soup with summer vegetables. It’s actually the work of Sam Kass, the White House chef, but it appears in the book. If you decide to cook it, let us know.

CORN SOUP WITH SUMMER VEGETABLES
“This versatile soup is the essence of summer. Dairy-free and nearly fat-free, it showcases the pure, sweet taste of summer corn and can be served hot or at room temperature,” White House chef Sam Kass writes in Michelle Obama’s new book, “American Grown: The Story of the White House Kitchen Garden and Gardens Across America.”
“A garnish of summer vegetables, grilled and cut into bite-sized pieces, makes this soup your own unique creation. Try zucchini or summer squash, tomatoes, eggplant, peppers or mushrooms, alone or in combination. If you leave out the corn kernels and don’t thin the soup with the corn stock, this becomes a luxurious sauce for seafood like halibut, tilapia, or shrimp.”
Start to finish: 1 1/2 hours
Servings: 4
6 ears of corn, husks and silk removed
2 sprigs fresh thyme
Juice of 1/2 lemon (about 1 tablespoon)
Salt
Olive oil
Grilled vegetables of your choice: zucchini, summer squash, tomatoes, eggplant, peppers, mushrooms
Carefully cut the kernels off the ears of corn. To do this, stand each ear of corn upright on its wide end, then use a serrated knife to carefully saw down the length of the cob, rotating and repeating until all of the kernels are removed. Set the kernels aside. Do not discard in the cobs.
To make corn stock, place the cobs in a large stockpot. Add enough water to just barely cover. Bring to a boil over high heat, then reduce heat and simmer for 45 minutes to 1 hour, or until the water has a rich corn flavor. Strain the stock and discard the cobs and any solids. Set aside.
Reserve 3/4 cup of the corn kernels, then place the remaining kernels in a blender. Puree until smooth, about 45 seconds. If needed, add a bit of the corn stock to help get the blender started. Pour the puree through a mesh strainer into a medium saucepan. Discard any bits of skin.
Add the thyme and bring the soup to a gentle simmer over medium heat, stirring constantly. Do not boil.
As the soup heats, the starch from the corn will begin to thicken the soup. Once the soup has thickened to the consistency of applesauce, about 3 to 4 minutes, add the lemon juice and the reserved corn stock a bit at a time until the soup reaches the desired thickness. You should have 4 to 6 cups of soup. Season with salt.
Heat a small skillet over medium. Add enough olive oil to coat the bottom on the pan. When the oil is hot, add the reserved corn kernels. Do not stir until the corn has a nice brown color. Stir the corn, then remove it from the heat.
Divide the soup between serving bowls, then top each serving with some of the seared corn and any other grilled vegetables desired.
Nutrition information per serving (values are rounded to the nearest whole number): 150 calories; 45 calories from fat (30 percent of total calories); 5 g fat (0 g saturated; 0 g trans fats); 0 mg cholesterol; 27 g carbohydrate; 6 g protein; 3 g fiber; 120 mg sodium.

I did too, following it 90% has resulted in my feeling 1000% better as far as my intestines go, if you know what I mean. I was just at BBQ and they had hot dogs and mystery meat hamburgers, I passed and came home to eat food that didn’t have an ingredient label. My gut will thank me in the morning. If you didn’t read that book, then you should write your own, because as obvious as it seems, it’s not.

It’s just after noon, I have worked on my deck, did a morning run with my lab and changed my own oil on my cars (if you looked at my earnings; Michelle would say I am rich). I worked hard to get where I am at and still don’t pay people to tasks I can do..that’s how you keep what you have earned!
Since my dollar is worth about 10% less than last Memorial Day due to her husband’s failed policies. No to mention increased taxes, increase healthcare costs, increased food costs, increased energy costs and major loss on my home..looks like I will be doing my own work for the rest of my life.
For darn sure, I am firing up my gas grill, having some burgers, hot dogs, potato salad, homemade ice cream and a cold beer….that’s America! Oh btw my family has the right body-fat ratios because we cared for ourselves long before you and Barry entered the taxpayer paid Whitehouse dictating what we should eat!
So, Michelle slip into the taxplayer paid Whitehouse with your taxpayer paid servant and enjoy your soup with your taxpayer paid air conditioning!

I am an Army wife, I have learned to do many things, not because I had to, but because I chose to. My teenage son and I just built a deck around our pool, We just put in a new hot water heater, actually two, installed a new garbage disposal. During my husbands first deployment I repaired a portion of the porch on our 1880 farmhouse, tore out walls and ceiling in a room that was beyond repair (old plaster/lath) put in a new floor in the kitchen, that was just some of the stuff, I have also learned to do basic wiring. I like doing these things, I like NOT paying someone else to do it. We are not rich, but could afford to pay someone, I just don’t want to.

My wife and I are BBQ’ing hot dogs and burgers, and having salad, beans, AND American beer. But before that, I remembered my uncle Mike, who was a Pharmacists Mate at Normandy, and my Father, whose ship was ht by a Kamikaze off Okinawa. And I’ll also remember my paternal grandfather and Maternal uncle, who were both in the Mexican incursion and WW1. My grandfather was machinegunned, and my uncle was gassed.
